TORANEKO BONBON is a restaurant that is always on the road. The owner travels with her cooking utensils to cook in the locals’ kitchen with the local produce to serve the locals. TORANEKO BONBON is run by Nachio Nakanishi, a spontaneous and enthusiastic lady with a positive mind. Her dishes reflect her personality and always appear energetic. This current issue of OBSCURA interviewed the owner of the mobile restaurant. She has shared with us two of her recipes, so our readers can set off their own journey together with these homemade dishes.

法式長麵包三文治
把法式長麵包割出一道道縫,在縫裡塞滿喜歡的材料。這次的餡料以馬鈴薯沙拉為中心,再配上蔬菜及芝士。

材料
法式長麵包 1條
馬鈴薯沙拉 200克
青紫蘇 10至15片
煮白露荀 6條
西芹葉 適量
切片洋葱 適量
Camembert芝士 1/2個

馬鈴薯沙拉
材料
馬鈴薯 2個(去皮後約重190g)
蛋黃醬 50g
黑胡椒 少許

做法
1. 馬鈴薯去皮切成3至4厘米的方角,沖水
2. 於水中加少許鹽,將馬鈴薯煮軟
3. 倒去熱水後加再熱,直到鍋內水份全蒸發掉
4. 關火,趁熱將馬鈴薯搗成糊
5. 冷卻後加蛋黃醬及黑胡椒調味

Baguette sandwich

Slice the baguette and make a sandwich with any of your favorite ingredients. Our recipe uses potato salad as the main ingredient to match with vegetables and cheese.

Ingredients

1 Baguette
200g Potato salad
10 Green Shiso leaves
6 Cooked white asparagus
Celery Leaves
Sliced onion
1/2 Camembert cheese

Potato salad

Ingredients

2 Peeled potatoes (Around 190 g)
50g Mayonnaise
A pinch of black pepper

Steps:

  1. Cut the peeled potatoes into 3 to 4 cm cubes and rinse.
  2. Add salt to water, boil the potato until soft.
  3. Remove water from the pot, continue to cook until water evaporates.
  4. Remove the pot from heat. Mash the potato while it’s still hot.
  5. Cool down completely before adding mayonnaise and black pepper to taste.
